Whipped Cashew Cream

My new breakfast of choice

I struggle with breakfast and dessert. The first is because I don’t have a familiar repertoire without cereal and toast and I am not able to digest eggs easily. It has left me with a void. On the flip side, I have a significant recipe bank of dessert recipes that aren’t good for my health.

I heard about whipped nut cream (sometimes called cashew yogurt) from my friend Christie. It is delicious and I could eat this every morning for ever! 1 cup of soaked nuts is 4 servings, each 1/4 cup nuts and 1 date. To keep within appropriate calorie limits for my goals, nuts for breakfast means none as an afternoon snack.

I also played with a paleo version of cream-of- wheat almonds. I first tried almond meal with water, a pinch of salt and cinnamon, and then almond meal/coconut flour combined. I topped it with wild organic blueberries and a tsp per serving of maple syrup. The texture was most similar to grits. It needs bold fruit flavours – like peach, mango or citrus.
