Directions
This delicious tuna salad recipe is adapted from the Loaded Veggie Avocado Tuna Salad by Hummusapian » It calls for apple, onion and celery but I reimagined it with a savoury tomato-cucumber. Celery is expensive to purchase for just 1-2 stalks. Certainly not required.

Mash together the can of drained tuna with 1 Tbs mustard. |

Evenly distribute and layer into each wide mouth jar: coleslaw, tomato, bell pepper, celery (if using), and avocado. Add 1 tsp of flax seed or olive oil. |

Evenly divide the tuna into the jars. Pack in up to 1/2 cup of baby spinach (chopped lettuce or arugula) at the top. |

Seal with the lid/ring. Keep the jar upright until ready to serve and then shake. |
