4 cups kale shredded
2 handfuls Brussels sprouts thinly sliced
1 bag coleslaw I prefer a shredded carrot base
1/2 cup cranberries
1/4 cup pumpkin seeds
1 medium green apple finely diced
2 Tbs olive or flax oil
1 Tbs apple cider vinegar
2 Tbs lemon juice
1-2 Tbs onion sweet vidalia, minced
1 tsp honey
1-2 tsp poppy seeds
3/4 cup almond milk

This recipe has kale, Brussels sprouts and poppy dressing.

There’s a commercially prepared salad that I really like. I learned to make it myself last summer.

My kale overwintered well so I am hopeful for an abundance this summer to enjoy this salad regularly. These ingredients are sturdy so it will last up to 4-days. I store mine in mason jars and add half a chicken breast to make it a full meal.

Combine all the ingredients of the salad. If using a mason jar, the cranberries and pumpkin seeds can be divided evenly.


Combine the dressing ingredients. Mix into the salad. Top with a bit of extra flax oil to make it sufficiently moist.
