Directions
A delicious and easy Italian-inspired recipe made in the slow cooker. Layer vegetables, Italian sausage, cannellini beans and tomatoes. Serve with cooked quinoa and asparagus spears for a complete meal.

Layer the cut vegetables on the bottom of the slow cooker. Top with a layer of kidney beans and then meat (evenly spread). |

Add salsa and tomatoes. Sprinkle with spices. Add 1/2 cup of water. |

Cook quinoa with a ratio of 1:1.75 cups water. Optional: add 1/2 low-sodium bullion cube. |

Boil shallow amount of water in an asparagus pot or frying pan. Snap off the asparagus spear ends - the tough end will break off if you lightly flex it. Steam for 5 minutes. We serve 4 thin spears per person. |
