Sue’s Carrot Cake
One of my colleauges brought this cake to a committee meeting. Oh it was a dessert week and she was so kind to share!
- 3 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 2 cups flour
- 2 cups carrots (grated)
- 1 cup chopped nuts
- 1 cup crushed pineapple (drained)
- 1 tsp vanilla
Combine eggs, sugar & oil, mix until smooth. Add salt, soda, cinnamon & flour, one at a time. Add carrots, nuts, pineapple and vanilla. Pour into greased bundt pan or 9 x 13. Bake @ 350 for 40 to 60 minutes.
Cream Cheese Frosting
With electric mixer, cream together:
- 80z softened cream cheese
- % cup softened butter
- 2 tsp vanilla
Gradually beat in enough icing sugar (about 3 cups) to give smooth spreadable consistency. Sue’s was almost like glossy whipped cream in texture.
