Cinnamon Fruit Cobbler

Having read the comments of the original recipe (see below), Steve noticed someone recommended, “… I would use refrigerated already made biscuits (like Pilsbury) rather that Bisquick.”  As part of our Valentine’s Day dinner, he modified the recipe without any consultation (he even made cheat notes) and surprised me with a beautiful presentation after dinner of this fruit cobbler:
  • 2 Tbs sugar, less 1 tsp sugar
  • ½ pkg.  (4-serving size) JELL-O Vanilla Instant Pudding
  • 2 cups frozen fruit mix
  • ½ package of Country Biscuits
  • ¼ tsp  ground cinnamon
  1. Combine fruit in large microwaveable bowl. Microwave on HIGH 1 min.
  2. Mix remaining sugar with pudding mix.  Stir in fruit plus 2 Tbs water, mix well. Spoon into 8×8″ baking dish. Place biscuits over fruit mixture. Mix reserved sugar and cinnamon; sprinkle over dough.
  3. BAKE 20 min at 350F or until fruit mixture is hot and bubbly and biscuits are lightly browned. Serve warm topped with whipped cream (from a can). Serves 4 (but we ate the whole thing).
