Applesauce Gingerbread Cake

By BFF Allison copied this one out for me. Moist, not too sweet and ideal for serving with afternoon tea and makes the house smell great:

  • 1½ cups unbleached flour
  • 1 cup wholewheat flour
  • ½ cup sugar
  • 2½ baking soda
  • 1 tsp each: ginger, cinnamon, allspice
  • 1½ cup unsweetened applesauce
  • 1 cup molasses
  • 3 egg whites

Combine dry and wet in two separate bowls. Mix well. Spread batter in a non-stick 9×13″ pan. Bake 325F for 40 min.
