Upside-down Cake

So yummy … here’s what you need:

  • ½ c butter
  • 1½c sugar
  • 2 eggs
  • 2¼ c flour
  • ½ tsp salt
  • 2 tsp baking powder
  • 1 c milk
  • 1 tsp vanilla
  • 1/3c butter
  • ¾c brown sugar
  • small tin of fruit to cover the bottom of the pan (I recommend pinapple)
  1. combine butter and sugar. Beat with eggs
  2. Mix dry ingredients together (except the last 3 – they’re for the topping). Add wet and dry alternately
  3. Melt butter for topping and spread on the bottom of the pan. Cover evenly with brown sugar. Drain fruit and arrange on the bottom
  4. Pour batter over top and bake at 350F for 45min
  5. Turn upside down while stil hot. Arrange the fruit so it looks presentable (if necessary). Cool and eat!
