Banana Cake with Penuche Icing

While we’re on the topic of banana’s and desserts … this is a favourite in my family that was passed down from my Great Grandmother (although Steve’s actually allergic to bananas so I don’t have them at home often):

  • ½c shortening
  • 1½c sugar
  • 2 eggs
  • 2¼c flour
  • 1 tsp baking powder
  • ¾tsp baking soda
  • pinch nutmeg
  • 1 tsp salt
  • ¼c buttermilk (sour milk)
  • 1 c mashed bananas

Cream shortening and sugar. Beat in eggs. Sift dry ingredients and add n with wet. Bake at 350F for 40min in a large pan (25 if it’s a layered cake). It tastes best if its a touch under-done!

Funny story about the icing – my Dad is excellent at making this. He really has the patience to make it. We always called it pə-ˈnü-k . He looked it up one day, only to discover its pə-ˈnü-chē »

  • 2 2/3 c brown sugar
  • 2/3 c milk
  • 2/3 c butter
  • ½ tsp salt

Bring to a boil, stirring constantly. Boil for 1 min. Take off the heat and stir for ever (or until thick enough to spread). It is very rich so don’t eat it by the spoonful, you will make yourself sick!
