Rich Apple Cake
This recipe is from one of the women I used to work with at McMaster:
- 2 c flour
- ½ tsp salt
- 1 tsp each: nutmeg, cinnamon
- 1 tsp baking soda
- 1 ¼c oil
- 2 eggs
- 2c sugar
- 2c apples – cored, peeled & coarsely chopped
- 1 tsp vanilla
- 1/3 c brandy
- Preheat oven to 350F. Mix oil, eggs and sugar. Sift dry ingredients together. Combine and add to wet. Stir in apples, vanilla and brandy. Mix well. Batter will be stiff.
- Spread into lightly greased 9×13” pan or a bundt cake. Bake 35-45 minutes. Cool before serving.
