Rich Apple Cake

This recipe is from one of the women I used to work with at McMaster:

  • 2 c flour
  • ½ tsp salt
  • 1 tsp each: nutmeg, cinnamon
  • 1 tsp baking soda
  • 1 ¼c oil
  • 2 eggs
  • 2c sugar
  • 2c apples – cored, peeled & coarsely chopped
  • 1 tsp vanilla
  • 1/3 c brandy
  1. Preheat oven to 350F. Mix oil, eggs and sugar. Sift dry ingredients together. Combine and add to wet. Stir in apples, vanilla and brandy. Mix well. Batter will be stiff.
  2. Spread into lightly greased 9×13” pan or a bundt cake. Bake 35-45 minutes. Cool before serving.
