Ingredients – most of this you won’t have on hand:

  • 1/3 c brown sugar, packed
  • ¼ c sugar
  • 3 Tbs cornstarch
  • ½ tsp  cinnamon
  • ¼ tsp allspice
  • 2½ c each fresh peaches and pears, peeled and sliced
  • 1 Tbs lemon juice
  • 9″ unbaked pastry shell
  • ½c flour
  • ¼c sugar
  • 3 Tbs brown sugar
  • ¼ tsp  cinnamon
  • ¼ tsp nutmeg
  • ¼c cold butter or margarine

Okay, first for the filling: combine the sugars, cornstarch, spices in a bowl. Sprinkle fruit with lemon juice (in a separate bowl). Add to dry ingredients and toss to coat. Pour into pastry shell.

To make the streusel topping: combine flour, second set of sugars and spices. Cut in butter until you get a crumbly mixture. Sprinkle the mixture over filling.

Cover edges with foil (to reduce browning). Bake 375F for 1 hour, or until bubbling. Serves 6-8 pieces

Meaghan makes this regularly and our family loves it! This recipe is based on one submitted by Jayne in Colorado via “The Best of Country Cooking.”  She recommends you serve it cold with icecream.
