Tahini Salad Dressing

Ingredients

2 Tbs tahini
2 Tbs water
2 Tbs olive or flax oil
1 Tbs soy sauce or Wheat Free Tamari
1.5 tsp lemon juice
1 garlic clove pressed or finely minced
1/4 tsp ginger fresh, finely grated

Tahini Salad Dressing

Combining the creaminess of hummus with the rich umame of soy (or tamari), garlic, ginger and lemon.

Directions

This dressing is ideal over Fattoush salad. Similar to a greek salad (rough chopped tomatoes, peppers, cucumber, parsley) but tossed with lettuce and toasted pita. We don’t serve ours with olives but they are a lovely compliment if you like them.

Combine all ingredients in a small jam jar. Shake well, until the tahini is blended (stirring with a fork can also help).

Toss with your salad before serving. Alternatively, pour equally into the bottom of 4 wide-mouth jars for a container salad.

Will keep for up to 4 days in the fridge.
