I experimented this weekend with making a vegetarian breakfast. I think it was a success, but my own taste buds prefer cannellini or black beans (and its less work than removing the husks from fava beans).
Experimental Recipe Success!
Will make again! It can be easily reheated with a splash of water for a fast breakfast this week. My spouse will enjoy it with scrambled eggs because he needs the extra protein. A jalapeño can easily be added with the garlic to give it a bit of kick to start your morning. Speaking of jalapeño, this would be great in a breakfast burrito.

Rinse the beans and cover in cold water. Add an organic bay leaf but no salt. Simmer until the beans are soft. If using fava beans, let them cool and rinse with cold water, then pop the beans out of their skins so they can be smashed. I compost the skins in my garden. Beware, it can be messy. |

I like to prep my vegetables first and store them in bowls so I don't feel rushed but but to save time - chop one sweet onion and sauté for 5 minutes. During that time mince 2 garlic cloves. Add the minced garlic to the pan and cook 3-5 minutes more. During that time, chop 1 small tomato. A jalapeño can easily be added with the garlic to give it a bit of kick to start your morning. |

Add 1/2 the beans to the pan and cook for 3 minutes. Mash it up. Then, add the remaining beans and tomato. Season to taste. Cook until heated through (about 5 minutes). Finish with a squeeze of lemon juice. |

Final product - smashed beans to serve over sprouted toast or brown rice. Makes 4 servings. |
