Mayo is one of those jars we buy at the store but the texture creeps me out. My husband likes the whipped-dressing. Either way, it’s an oil product and I decided to be adventurous and try making it from scratch.
It was so easy and you can incorporate any flavouring to make it into a perfect dressing or dip! Stay tuned for more recipes involving this base.

Let the egg and lemon sit for 1 hour to bring them up to room temperature. |

In a food processor, combine 1/4 cup oil, the egg and salt & pepper. Mix thoroughly. |

While it's running, slowly driving in the remaining 1 cup of oil. The slower you pour in the oil, the thicker the sauce. It should have emulsified to look just like mayo! |

Add the lemon juice and blend it in on low to incorporate. |
