Kerry’s Pork Tenderloin Crock Pot style
- Nice pork tenderloin
- Onions – cut into about equal sized slices
- 3 TBS soya sauce
- 1 cup apricot jam (I usually use the whole fruit kind)
Mix jam and soya sauce. Place onions in bottom of crock pot to make an even layer. Put tenderloin on top of onions. Cover tenderloin with jam mixture. Cook on low 8 hours-ish.
A la Kerry: I usually put the crock pot on when I leave for work (about 7), it will still be nicely done (aka not burnt) by 5-6pm.
A la me: Tastes delicious with steamed asparagus and roasted new potatoes!
