This is Steve’s go-to recipe. He enjoys baked chicken over rice for weekday lunches. I cube mine into salads.

Preheat the oven to 400F. Place the chicken on a baking tray (we use a wire rack that sits into a pan lined with tin foil for easy clean up). |

Brush the chicken breasts with olive oil or marinade. Bake for 40 minutes. |

Cut open one breast. The meat will be white and the juices clear. Let stand for 5-10 minutes. |

Cut each chicken breast in half for 2 servings. |
