There’s a commercially prepared salad that I really like. I learned to make it myself last summer.
My kale overwintered well so I am hopeful for an abundance this summer to enjoy this salad regularly. These ingredients are sturdy so it will last up to 4-days. I store mine in mason jars and add half a chicken breast to make it a full meal.

Combine all the ingredients of the salad. If using a mason jar, the cranberries and pumpkin seeds can be divided evenly. |

Combine the dressing ingredients. Mix into the salad. Top with a bit of extra flax oil to make it sufficiently moist. |
