Upside-down Cake
So yummy … here’s what you need:
- ½ c butter
- 1½c sugar
- 2 eggs
- 2¼ c flour
- ½ tsp salt
- 2 tsp baking powder
- 1 c milk
- 1 tsp vanilla
- 1/3c butter
- ¾c brown sugar
- small tin of fruit to cover the bottom of the pan (I recommend pinapple)
- combine butter and sugar. Beat with eggs
- Mix dry ingredients together (except the last 3 – they’re for the topping). Add wet and dry alternately
- Melt butter for topping and spread on the bottom of the pan. Cover evenly with brown sugar. Drain fruit and arrange on the bottom
- Pour batter over top and bake at 350F for 45min
- Turn upside down while stil hot. Arrange the fruit so it looks presentable (if necessary). Cool and eat!
