Roasted Chicory Root

I made an effort to reduce my caffeine intake by mixing the coffee grind with roasted chicory root. The taste is very similar (almost unnoticeable) using a 3:1 ratio (1½ Tbs coffee to ½ Tbs chicory) but 2:1 is the more common ratio.

Chicory is the blue flower you see growing along side the highway. The leaves are similar looking to Endive and is part of the Aster flower family, along with chamomile.

Throughout December I’ve been fighting a cold – stuffy nose and congested chest. The actual viral infection is long gone but the symptoms keep lingering. I am concerned these are signs of an allergy and possibly to coffee, which I already know irritates my bladder.

I’m going to stay off coffee for two weeks (or until my lungs aren’t heavy) and then reintroduce it and see if there are any changes. I’ll keep you posted.
