Notes for Next Time: BBQ frozen steak
Steve made us steak, from frozen because it was on super sale the other week. He had some thoughts on what to do next time, so I recommended we take notes online in stead of a piece of paper that will get lost (since that’s the purpose of this site).
- They were still a little frozen in the middle so we used the meat tenderizer.
- Steve used a meat thermometer to check the doneness, and it was a bit past our preference. He was targeting 150F for medium rare but they were medium. Next time take them off at 130F using the digital meat thermometer.
- The asparagus was on for about 15 minutes, but would have been fine after 12. It had an excellent taste and crispy texture; completely different to our normal steamed method. LOVE Ontario, fresh asparagus!!!
- The steak was cooked 30 sec per side, with the grill preheated to 550F and the remaining cooking time was done at 400F. Seemed fine (but I’m going to check with Jamie Oliver’s recipes because everything of his I make is wonderful!). Total cook time is 17 minutes but would have been done at 13.5 or 14 minutes. Cuts of meat were a little under 2″ thick and D=3″ for reference.
- The red potatoes were halved and boiled with 2 cloves of garlic and one shallot, and then smashed in their own water with dried rosemary leaves, cracked pepper and sea salt. Steve thought they were a little dry, and added marg.
