Non-traditional Hummus
This recipe is adapted from the Healthy Gourmet, as seen on OWN » It has delicious flavour, is very creamy and is certainly non-traditional. I would make this again, hands down!!
Ingredients:
- 1½ cups sweet peas
- 1 avocado
- ½ cup Greek yogurt (I prefer the PC brand)
- 2 tsp lemon juice
- 1 tsp olive oil (optional)
- 1 clove garlic
- Sea Salt and/or fresh cracked peppercorns, to taste
If you are using frozen sweet peas (as I did), let them sit in warm water to come to gently defrost. Then, add all ingredients to a blender and puree until smooth; drizzle in olive oil if using. Serve with cut up vegetables or baked lentil chips.
