Upside Down Peaches

I cracked open a jar of spirited peaches. We had them with my parents last week with frozen vanilla yogurt and the spirited sauce simmered down to pour over. I had visions of peaches with pecans and a drizzle over cake so I am remaking my sister’s recipe for Upside Down Cake. I think it will be perfect for Bonnie and Ryan’s BBQ.

Here is the recipe » I lieu of a small tin of fruit to cover the bottom of the pan, I used halved peaches that had been preserved in syrup and brandy and then simmered the sauce to pour over the cake once it had cooled.


This is the peaches and pecans spread with butter and brown sugar.


This is the batter poured over. It is a bit thick, but has a distinct smell, almost like bread.


This is the final cake. It was delicious!
