Mincemeat squares
This recipe was adapted from Put a Lid on It! a book on super sale that I picked up at Zellers of all places while looking for ½-cup jars. Ironically, Weeks Home Hardware had much better prices so I got the jars there instead.
This “pie” has a short-crust topped with a jar of minced meat and then covered in an egg white mixture to create a frothy topping. The crazy part was that I opened an old-style glass and rubber seal (with the zinc lids) jar. I was given them last year and used my fruit mix as a test to see if they turned out. Quite a few went mouldy but this one was perfect. It took both of us chipping away at the seal to break the plastic and crack off the lid. How ridiculous is that. Will not use again. The other jars I use only for dry goods (like rice, beans, etc).
Mix 1-¾ cups of magic crust mix with ¼ cup of brown sugar (not packed). Mix well with one egg yolk (reserve the egg white) and press into an 8″ square pan. Bake at 350F for 10 minutes then remove from the oven. Cover the crust with a pint jar of apple or pear mincemeat filling.
While the crust is baking, whisk one egg with the egg white until frothy. Stir in ¼ cup of sugar, 2 Tbs melted butter, 1 Tbs milk and a cap full of vanilla extract. Pour over the egg mixture and bake for 25 minutes (or so) until golden brown.
Let cool, cut into squares and serve with ice-cream.
