Rhubarb Water
What is rhubarb water? I first heard of it from Edna Stabler, Food that Schmecks.
Pour boiling water over the raw rhubarb and let stand 5 minutes. This will pull out the tart taste so you don’t need to add extra sugar to your recipe. Drain the pieces for your recipe, reserving the water.
I reuse it with some added lemon juice to soak the cut apples. For the remaining water, boil and skim off any foam. Save in the fridge to add to hot water or mix with lemonade. You can process pints for 15 minutes in a boiling water bath if you plan to keep it.
