Redo of quinoa using ground poultry
I made a quinoa dish a few months back with tuna and left myself a note to retry with ground poultry. Chicken was the cheaper choice, so I picked some up today, along with fresh carrots and celery. The smell is already tantalizing my tastebuds!
Again, I am making it on a Sunday for my weekly lunch. Easy to reheat and very healthy.
Recipe substitute: 2 cans tuna in water for 1 package of ground turkey or chicken. Scramble fry until no longer pink, then set aside to keep warm. Reuse the pan to cook the vegetables, in order to retain the flavour of the drippings, and add back in at the end. Heat through before serving.
