A very special thanks to my  friend, Judi. She has kindly shared garlic scapes and zucchini with me. Thank you!!! I baked the zucchini and then pan fried the scape before adding it to my hummus (recipe forthcoming). Judi mentioned to cut off the pod and discard it. I had never heard of it so I looked it up:

Garlic scapes  are also known as garlic tops, garlic shoots, green garlic, spring baby garlic, garlic spears, early garlic greens, or garlic “flowers”. It is the curly green shoots that grow from “heads” of  garlic which are usually discarded before harvesting. They are similar to scallions vs onions.
