Patak’s Comfort Food
I have come to find that British Curry is my comfort food. This past week, I picked up a jar of Patak’s biryani sauce. It was on the 50% off shelf by the check out and I felt compelled for some strange and unknown reason that impulsively adding it to my basket was the right thing to do. Specifically, the expiry date wasn’t until next calendar year so there was no reason for it to be on sale, really. The brand Patak’s from England, is also highly recommended by Chef Jamie Oliver.
Every week, my husband generously bakes two chicken breasts, lightly brushed with olive oil. I find ways of incorporating the chicken into salads, lentil and rice dishes, steamed vegetables, and stews. This week, I realized curry was the right dish for the chicken.
I took 1 jar of Patak’s biryani sauce, ¼ cup of water, and 150g of rice (just shy of 1 cup). I covered the pot with tin foil and then baked it at 350F for 35 minutes. Delicious and fluffy! Then I added the chopped baked chicken and thoroughly enjoyed my lunch. It made 4 very generous servings with a comforting spicy kick on the tongue that left you feeling like you’d eaten.
