Sweet & Spicy Hash
This week for breakfast I’ve had a sweet potato hash, with jalapeno and sauteed onion, and topped with a poached egg.
This is the basic recipe, adapted from Cook Yourself Thin (sans tofu). It’s 252 calories for the hash, assuming 1 sweet potato per serving, 9 grams of protein and almost 5g of fiber.

From BonAppetite, I found a simple microwave recipe for eggs at 1 minute to keep the time down:
The technique yields perfect silky, firm whites and runny, warm yolks every time. To replicate this restaurant trick at home, fill a 1-cup microwaveable bowl or teacup with 1/2 cup water. Gently crack an egg into the water, making sure it’s completely submerged. Cover with a saucer and microwave on high for about 1 minute, or until the white is set but the yolk is still runny. Use a slotted spoon to transfer the egg to a plate.
