Chef Meg’s Pumpkin Pie

I have made Chef Meg’s pumpkin pie spice in the past. Delicious! I found her recipe on SparkPeople that uses graham crackers for a crust. It looks delicious: http://recipes.sparkpeople.com/recipe-detail.asp?recipe=1299372

While it’s not my plan to make the same crust (I prefer to not heat mine) but this filling looks delicious:

  • 4 ounces Neufchatel cream cheese, softened
  • 1/3 cup brown sugar, packed
  • 1 teaspoon vanilla
  • 1 15-ounce can pumpkin puree
  • 1/4 cup evaporated milk, 2%
  • 1 teaspoon pumpkin pie spice
  • 1 egg
  • 1 egg white

Pour the filling into the cooled crust, and bake for 25 minutes.  The center will be somewhat jiggly.  Remove from the oven to cool. It makes 8 slices.
