Asian inspired Chicken Salad
This recipe comes from Cook Yourself Thin Faster. We accidentally over cooked the chicken breasts this week, so it worked out well that I had planned this meal. I substituted PC Greek Yogurt for mayonnaise. The original recipe was for 246 calories and 7g fat, according to put a fork in it. I was able to reduce the calories by almost 20% and brought the fat down to 5g. Quite a difference! I also have it up to 31g of protein.
- Chicken Breast (cooked), no skin, roasted, 2 breast, bone and skin removed, diced
- Greek Yogurt, P.C. Brand 0% plain, .5 cup
- Sesame Oil, .5 1tsp
- Sesame Seeds, 1 tbsp
- Soy sauce (tamari), .5 tbsp
- 1 lime, zest and juice
- Peppers, sweet, red, fresh, .5 medium, finely diced
- Celery, raw, 1 stalk, medium, finely diced
Mix sauces and yogurt. Mix in chicken and veggies. Let stand over night and serve with ½ tomato and over lettuce.
