Thai Curry
Fantastic soup. 4 chicken thighs, skin removed. Saute onion and celery, garlic and ginger in coconut oil. Add chicken thighs and brown on both sides. Add curry paste, three cups of broth, 1 Tbs of soy or fish broth, and 1 can of coconut milk. Bring to a boil and then simmer about 10 minutes. Remove the chicken and discard the bone – chop the meat and return to the soup.
