Salmon Patties

This recipe was surprisingly easy to make. The original called for 2 tins of salmon but it was easier to halve the recipe and make 2 patties at a time. I served it with the roasted fennel.

  • Olive Oil, 1 tbsp, divided
  • Onions, raw, .5 cup, chopped
  • Celery, raw, .25 cup, diced
  • Egg, fresh, 2 large
  • PC Blue Menu Wild Pacific Pink Salmon no salt added, 426 gram(s) (or 2 cans)
  • Mary’s organic Crackers (20 crackers), crushed
  • Dill weed, dried, 1 tbsp
  • Mustard seed, yellow, 1 tbsp

Heat 1 tsp oil and saute onion and celery for 5 minutes (aka sweat the vegetables).

Mix together with salmon, egg, herbs and ½ crackers. Form into 4 patties, approx ½” thick. Cover and chill for 20 minutes.

Over medium heat, cook patties 5 minutes per side. Serve warm.

Approx 300 calories for each “burger”. I used glutton free crackers.
