Roast Fennel

I could eat roasted garlic until I’m stuffed. I love it, especially the way it gets crispy and yet chewy at the same time. A true favourite.

I sliced up one bulb and 2 cloves of garlic (but should have done more) and tossed with olive oil and a pinch of sea salt.

Roast at 350F for 15 minutes; turn and roast another 20 minutes. Remove any bits that are done and set aside; then turn again and finish for 8 minutes to get a golden edge.  Absolutely delicious, and only approx 70 calories. A great side dish or warmed afternoon snack.
