Raw Pad Thai

Last week (I know, I didn’t post … my budget was due at work so this wasn’t a priority), I had raw pad thai for lunch. WOW! I had no idea it could be so delicious:

  • 1-2 zucchini, cut into ribbons (in lieu of pasta)
  • 1 bag broccoli coleslaw (carrot, cabbage, etc)
  • 1/2 cup raw cashews

Sauce:

  • 2 Tbs Tahini
  • 2 Tbs almond butter
  • 1 Tbs lemon or lime juice
  • 2 Tbs Tamari (wheat free soy  sauce)
  • 1 Tbs raw honey
  • 1 garlic clove, minced
  • 1/4 tsp ginger (powder)

Whisk the sauce and pour over the vegetables. Delicious! Makes 4 servings. Keeps in the fridge.
