Nourishing Broth
This soup is very nourishing and created by the nutritionist at Goodness Me to ward off illness that comes with the change in temperature in the Fall and Spring. Astralagus root and green oats are herbs that help support the immune and immune system.
Broth:
- chicken bones
- 4 L filtered water
- 1/4 cup apple cider vinegar, unpasteurized
- 1 strip wakame (type of sea weed)
- 1 large onion, skin on, cut into quarters
- 2 stalks of celery with leaves, coarsely chopped
- 2 carrots, coarsely chopped
- 2 cloves garlic, whole
- 6 strips of astragalus root
- 3 heaping Tbs drived flowering green oats
Add chicken, water and vinegar to crock pot. Let stand for up to an hour. Add any vegetables to the pot as they are prepared.
Cook on low for at least 6 hours. The longer time allows minerals from the bones to be dissolved – up to 24 is fine.
Strain the broth. Let chill overnight and then skim the fat. Use for making rice, soups or other dishes.
