Raspberries with Orange
Are you sensing a theme? This time, I mixed 4 cups fresh raspberries with the juice of one orange, 2 cups of sugar and 2 cups of mixed berries (1 each: blueberry and blackberry from frozen) plus 2 cups of red currents in lieu of pectin. I added the sugar right away to help melt the frozen fruit and then added the orange juice (and a bit of pulp). Once it came up to a boil, over med heat, I let it cook for 35 minutes, stirring frequently.
8 cups fruit but only 4¼ cups of jam.
