Ground poultry hash
This recipe is quick, filling and good for dinners on the go during a busy week. Using a bit of oil in a dutch oven, saute the celery and onion for 2-3 minutes. Add the zucchini and ground meat. When its mostly cooked, toss in the tomatoes and spices (if dry) simmer for 15 minutes to finish cooking (or stir in fresh herbs, if using). Mash together the brown rice and yellow flesh tomatoes.
- 1 onion, diced
- 2-3 stalks of celery, finely sliced
- 2 zucchini, chopped
- 1 lb. ground chicken or turkey
- 1 jar diced tomatoes (2-3 cups)
- 2 tsp. summer savory or sage
- dash of: salt, pepper, cardamom
- 1-2 cups brown rice, cooked
- 2 potatoes, cubed and cooked
One serving is 1/2 cup of carbs and 1 cup of cooked mixture. Makes about 6 servings.
