Cole Slaw
I am a huge fan of slaw – always have been. I don’t mind the vinegar based dressings but prefer the creamy kind. PC now has a broccoli based slaw and there is always the cheap Dole brand in a bag. I add in a diced green apple to give it more tartness to the flavour.
Jamie Oliver’s recipe starts with a base of carrots & fennel and then adds at least 2 of the following: 3-4 radishes, 1 beet, ½ celeriac, red and white cabbage, ½ red onion, or 1 shallot. His dressing is made from plain yogurt (for all the same reasons I agree with).
In a separate bowl, mix half the lemon juice [from 1 lemon], a glug of extra virgin olive oil, the chopped herbs [A handful of fresh soft herbs (use mint, fennel, dill, parsley and chervil), leaves picked and chopped], [1 cup] yogurt and [2 Tbs] mustard. Pour this dressing over the veg and mix well to coat everything. Season to taste with salt and pepper and the rest of the lemon juice if you like. – Jamie Oliver, the best winter veg coleslaw
I served ½ cup of this with our pad thai dinner. Tangy and delicious!
