Cider a la Facebook

Every so often I check into Facebook. Last night it was to post about how much I enjoyed the movie Hugo – it was extremely uplifting and a joyful movie. While I was scrolling through my news I saw a post for Waupoos Cider. It’s my all time favourite kind (even more so than Strongbow). They serve it at the Pheonix, Hamilton but don’t sell it at my local LCBO (disappointing to say the least).

The recipe calls for cider simmered with sherry and spices then mixed with whipped eggnog (that is frothy). All round sounds fantastic, except perhaps the eggnog part – I am a purist when it comes to cider.

  1. Core but do not peel 4 small apples. Set them on a baking sheet and roast for 20 minutes at 350F.
  2. Simmer 3 cups of cider and 1 cup of sherry with cloves and cardamon pods (8 of each) plus 1 cinnamon stick,  for about 10 minutes. Add an additional measure of cider and sherry (same proportions) and heat through but do no let boil (or it won’t be a hard cider).
  3. Serve in a punch bowl with roasted apples.

As an FYI, I’ll be making something along these lines for Christmas Eve using the unsweetened apple juice I canned earlier in the fall, but a family friendly version (with a bottle of rum available on the side).
