Vegetable Soup with clams
Last week I had too much sugar, and finishing off with a weekend walk through MapleTown for a pancake breakfast, while delicious, didn’t help matters. I literally put on 2.5lb after working for 4 weeks to loose 5lb. Anywho, this week is soup, salad and sandwiches.
Right now I have ½ a sweet onion and potato cubes boiling in vegetable stock (about 6 cups). Once everything is softened, I am going to puree it to form a thick soup base. In a separate stock pot, I have oil heating to saute diced celery and carrots. After a few minutes, I added the remaining diced sweet onion, and about 3 minutes after that, 2 cloves of minced garlic. Smells fantastic!
Once everything had softened, I stirred in some cracked pepper, sea salt and thyme. Then I ladled in the broth and a jar of baby clams (having a craving) and ½ green pepper, then let it simmer another 15 minutes to warm through. Smells incredible and took less than 30 minutes to make.
