Oh! Haven’t had good fish in a while – actually I have been having a lobster craving, but Steve doesn’t want to hear them scream in a pot of boiling water, so fresh rainbow trout it was (although lobster was $7.99/lb today).

  • Mix up 2 Tbs each: plain yogurt and mayo with 1 tsp lemon juice. Stir in salt and pepper to taste.
  • Slice a few fresh mushrooms and very thinly slice ¼ red onion.

Lightly oil a pie pan and lay one fish fillet, cut in half, skin side down. Top with mushrooms, 1 tsp capers (optional) and onion, then pour over with sauce. Bake, uncovered, at 350F for 20 minutes, or the fish flakes. Serves 2.

We served this with a side of steamed vegetables from frozen with a dab of margarine and freshly cracked pepper.
