Cocoa-nut Pick me Up
This treat has a strong dark chocolate flavour that hits the spot when you are having a sugar craving. I take two to work as my afternoon snack and stored the rest in the freezer – made enough for 11 weeks. The ingredients are simple:
- ½ cup each: unflavoured protein powder, ground flax, dried cranberries, raw sunflower seeds, dried unsweetened coconut, large oat flakes and honey (or agave nectar)
- 1 cup each: cocoa powder and almond butter (or sunflower butter)
Add all dry ingredients to a food processor; pulse to break up the larger pieces.
Combine wet ingredients plus ¼ cup of water and dry plus 1 cup cocoa powder. Mix well, the roll 1Tbs each into balls. If it’s too dry, moisten with a little water. Don’t over do it or it will get runny and too sticky to work with. It also makes your hands messy but cleans off easily – just an FYI. Chill for about 1 hour to set. Notes: Honey may crystallize if frozen. Make sure you drink these with lots of water to help fully reap the digestive benefits of the ingredients. One is really rich and they taste really good, so don’t eat them too much!
