Bubble & Squeak

My sister and brother-in-law had the gang over last night for dinner. There was Kilkenny and Guinness in the fridge, corned beef done in the slow cooker for 6 hours with a pint of Guinness (it melted in your mouth and crumbled with a fork), BBQ sausages and bubble & squeak. What is that? It’s delicious! The chief ingredients are potato and cabbage; meat was traditionally chopped up finely added to the dish using left over Sunday roast. It gets baked into a soft mound of delicious mash of mostly potato. I’ll let you know when I get the recipe!

There were also cranberry-spice cookies that had whole wheat flour and protein powder in the ingredients list. Must get a copy of those  too … hint hint.
