Delicious meals: Take two
This weekend I made the lentil paella for my sister Bonnie and her husband, Ryan. I added rice to the mixture and thought it was filling and full of natural flavour (but put hot sauce on the table all the same). Next time I might add some thyme (no rhyme intended, hahahah). I served it in bowls, with left overs family style on the table for those who wanted seconds. So easy to make and the house smelled delicious (if you like fish).
Given how full I was last week, I am making a fresh vat of red cabbage soup for my lunches, hummus for my afternoon snack and rice with lentil pilaf, topped with baked pork tenderloin for dinners.
My special treat this week will be no-pudge brownies. I got the PC no-name fudge brownie mix (110 calories from the dry mix, 16 servings and way less sugar than the fat-free Betty Crocker brand) and two cups of pumpkin puree (not pie fill) at only 22.5 calories per ¼ cup. That’s under 140 calories per brownie. Woohoo!
