Tzatziki for our Family BBQ
My sister, Bonnie, is hosting a family BBQ this weekend and asked me to bring an appetizer. My plan is to soften and whip together cream cheese with goat cheese, topped with the roasted red pepper spread as a crostini. I am also making a tzatziki with the massive cucumbers we got from Steve’s co-worker.
Apparently her plant is producing 10 cucumbers a week averaging 12 to 24″ long. Steve actually had one break the bag because it was soo long and heavy and snap in half when it hit the ground. He brought home a wounded half and apologized for loosing the other when it rolled under a car in the parking lot. I thought that was hilarious and was going to take a photo, but didn’t get a chance before it was eaten.
This recipe is very simple: plain yogurt, seedless cucumber pulp flavoured with a bit of mint and garlic to taste. You can thin it with olive oil or lemon juice. I’ve posted about this before but here they are for reference:
