Warm Spiced Peaches
Peaches are early this year (as were strawberries and likely tomatoes) by about 3 weeks. Might through a crimp in the Winona Peach festival (Aug 27-29); lucky for me they were $3 a quart, which is more than enough to make a pie.
This recipe called for microwaving, but I think that’s silly.
- 3 ripe peaches, peeled and sliced
- 1 Tbs sugar
- ½ tsp cinnamon
- ½ tsp orange peel, finely shredded
- ½ tsp vanilla
- ¼ tsp nutmeg or all spice
- 6oz carton of vanilla yogurt for topping
1. In a medium saucepan, combine peaches with spices. Toss gently to coat and heat over medium-low until heated through, stirring frequently (just in case because wasting peaches due to burnt sugar is a crime).
2. Divide into 4 parfait bowls and top with yogurt. Serves 4.
Note to self: This would also be delicious over cooked whole-flake oatmeal, cooked with water and topped with milk OR a muesli left to stand over night with the yogurt and milk, then topped with hot peaches … oh wait, this is so breakfast tomorrow because there’s only two of us, so I’ll have left overs. Yeah to me!!
