Field Tomatoes
This year field tomatoes were early and I had some time off, so I decided to try making a sauce with them using blanched and peeled and cored, diced tomatoes as the base.
I bought 2 baskets ($9 for 10 huge field tomatoes) at a roadside vendor from Woodstock and another 2 baskets (also $9) at a home in Waterdown. Red peppers were $2 each at Fortino’s (no one had them at market), garlic heads and onions were both $1 each and green peppers were 50c each. I probably bought more than I needed (2 peppers, 1 onion, 2 baskets of tomatoes, 1 head garlic) but I think it will make 8 jars at $12 total cost (not including the jars because I reuse them year over year, or get donations from friends and family of the store-bought mason style). That’s only $1.50 each, plus a day of my time, which I find relaxing all the same, so it’s even cheaper because therapy is expensive hahahaha
I’m also trying my crockpot this year to simmer the sauce. I am going to saute the onion, garlic and green peppers first, then try it on high for 3 hours to start. The basic recipe is here »
