Taste of Nigeria
This recipe is from a missionary who lived in Nigeria for 45 years. Her story in Taste of Home was very moving. There, two meals are eaten each day – breakfast and dinner, plus snacks (bean cakes and yams in egg). They cook with a lot of hot red pepper and banana to soothe the tongue. The main staples where she lived were corn, peanuts and yams, 18-20″ long. She could feed 200 children with just six of them. This is her recipe for African Beef Curry:
- 1 lb beef stew meat
- 4-6 (or 1 can) tomatoes, diced
- 1 small onion, chopped
- 1 small sweet red pepper, chopped
- 1 small green pepper, chopped
- 1-2 tbsp. curry powder
- ½ tsp. salt
Cut meat into 1/2″ cubes. In a large saucepan, combine the first seven ingredients. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until meat is tender, stirring occasionally. Serves 4.
She recommends you serve it over rice and garnish with raisins, peanuts and coconut if desired. Other options are: chopped cucumbers, sliced banana, diced raw onion, pineapple tidbits, mandarin oranges, or a mix of fresh red and green peppers and tomato.
I browned the beef with the onion, added 1 finely diced carrot and added a handful of raisins. I also used two green peppers, which I left out for the first hour so they would be a little more firm. I served it over lentils and garnished with cashews. Loved the flavours. Will definitely make again!
