Greasy Muffins
Allie has moved to Nunavut. She was making muffins this past week and this is the recipe for apple cinnamon muffins. She said, “I am going to mix maple syrup into the streusel topping and and put more than just cinnamon in them, cloves, all spice etc”. Since they didn’t turn out, I won’t bother typing it out for you.
Comments from Allie, post baking: OMG those muffins are GREASY!!! I doubled the recipe and I thought it seemed like a lot of butter (1 cup in the topping, 1 cup in the muffins) and when i took them out of the pans, they were sitting in little pools of butter so that I had to put them on papertowels to drain. Yikes. If I make them again, I would halve the butter and the apples. Also, instead of cubing the apples, I will use a coarse cheese grater (that’s what I do when I make oatmeal). I also substitued half of the brown sugar for maple syrup in the muffins and put quick oats in the topping and used a lot more cinnamon than she suggested and put cloves and allspice. They taste nice, they are just way to greasy.
