Roast Asparagus

Super easy (seriously!). We also made these with rainbow trout this week because it matched the timing and temperature in the oven. Here’s the recipe I used:

  • bag of frozen (or fresh) asparagus (I like European’s Best)
  • ½ Tbs olive oil

Preheat the oven to 400 or 425F. Trim the end of the asparagus (if fresh). Lay on a baking sheet and drizzle with oil.

Roast for 10 to 15 minutes, or until tender. Beware of letting the tips get too brown. Serve immediately (they don’t hold the temperature well).
